They say that good food almost offers the same amount of comfort as a mothers love. There's absolutely nothing better than loading up that very first fork full of a meal that's caused your mouth to drool just thinking about it. Then, the moment it hits your tastebuds and an eruption of flavour just explodes in your mouth. You close your eyes, take a deep breath, and carry on chewing. Wow.
I feel that food should be an experience, every meal tells a different story. The flavours are the characters. One shouldn't just eat to live, but rather live to eat.
Recently, I was at my favourite coffee shop Jarryds. I had heard from a friend that I needed to try their Neapolitana pasta as it was "ridiculously good". Naturally me being me, I had to try it. Well, I'm so glad I did. This simple bowl of pasta consisting of a traditional Neapolitan sauce, olives, mushrooms and finished off with some pesto, rocket and parmesan left me at a complete loss for words.
The combination of such simple flavours worked together like an orchestra in my mouth. It was completely more-ish and comforting, yet so refined and contemporary.
Foods like this, remind me why I love food and why good food is such an important experience.
Food allows you to take a break from the world around you and just focus on the good things in life. Good food can completely transform a bad day. Good food can bring people together.
So because I love cooking and was completely stunned at the complex flavours deriving from such simple ingredients, I attempted to recreate this delicious dish!
